Today I will be making pineapple coconut kheer.
This is a fruity twist to all-time favoriteIndian dessert rice kheer.
I have caramelized the pineapple
which adds a very refreshing and pleasing flavor to this kheer.
This recipe will serve 6.
To make pineapple coconut kheer we will need:
2.5 cups of milk
1 cup of coconut milk
1 20 oz can of sliced unsweetened pineapple
1 tablespoon of sugar
2 tablespoons of shredded coconut fresh or frozen.
I am using the frozen coconut.
It is available in Indian grocery store.
2 teaspoons of cornstarch
About 1 tablespoon of sliced pistachios
1/3 cup of sugar
which I will use to caramelize the pineapple.
This is a very simple recipe.
First we are going to boil the milk
till it reduces to almost half
and then caramelize the pineapple.
After milk and pineapple comes to room temperature mix them together
and garnish with some pieces of caramelized pineapple and pistachios.
For the best taste serve this kheer chill.
Let's get started.
First I will boil the milk over medium high heat.
Milk

Coconut
And sugar
Mix it.
And let the milk come to boil.
Milk has come to boil.
I will reduce the heat to medium.
And let the milk boil till it becomes almost half in volume.
Which should take around 15-17 minutes.
While the milk is boiling, we will prepare the pineapple.
First we will slice half the pineapple into 3-4 inch cubes.
This is done.
And now other half I will blend it into the coarse paste.
So half the pineapple, I am going to blend it
to make a very coarse paste or just chop it.
Shake it because we want to make sure this is not very pasty.
Pineapple is ready and let's see how it looks.
This pineapple is looking really good.
It's not very pasty. It's kind of coarse.
Milk has been boiling for bout 18 minutes.
And I have stirred it in between and scraped the sides.
So I will add the cornstarch which I have already mixed with the water.
Just stir it and add.
And cook for another 2 minutes.
This has been about 2 minutes.
So milk is looking really good and very creamy.
So I will turn off the heat and let it cool to the room temperature.
before we mix the pineapple.
Heat is on, medium high.
So we will caramelize the pineapple.
Here is the pineapples.
And add the sugar.
And mix it.
We have to keep mixing it maybe every half minute or so
till sugar is all melted.
Sugar has melted.
And now sugar has to caramelize over the pineapple.
And this should take about 4-5 minutes.
And as you will see that sugar has changed the color to golden brown.
So as you see sugar has started caramelizing
and make sure you keep cleaning the side
otherwise sugar will burn.
So now we have to mix it continuously.
Stir it continuously.
And it's getting very nicely done.
It has been changing the color and just another minute.
It should be ready.
It has nicely caramelized.
And it has taken me all together about 7-8 minutes.
I am going to take out half the pieces
which I will use for garnishing.
So take them out over the parchment paper or over the wax paper.
And just separate them.
Now I will add the paste we did for pineapple.
Just cook for 1 minute
so it also gets nicely caramelized.
Now this is done.
So I am going to turn off the heat.
And it has taken me about 1 minute.
And now we have to wait till it comes to room temperature
before we mix it with the milk.
otherwise milk will breakup.
Milk and pineapple now are at room temperature.
They need to be at least at room temperature or cooler
before we mix them together.
Now I am ready to add the pineapple to the milk.
And mix it really well.
This is mixed really well.
Before serving kheer should be chilled.
I have made one batch earlier and this is chilled.
and that's how it should be served.
So I will just serve them in individual bowls.
And now I am going to garnish them.
I am ready to garnish.
And these pineapples are looking really good.
I forgot to mention,
when you are taking out the pineapple on the wax paper
so you should grease the wax paper really generously
otherwise they will stick to it.
Just put couple of pieces of pineapple.
And garnish with few pieces of pistachios.
This looks really wow!
Pineapple coconut kheer is looking absolutely delicious.
