Hi guys, it's Desiree! Today I want to
teach you how to make Coconut Pineapple
Upside Down Cupcakes. These treats are
perfect for a summer party or luau,
they're filled with pineapple juice and
coconut rum. This recipe makes 24
cupcakes so we're going to use the Mega
Muffin Pan to get it all done at one
time. I'm going to spray everything with
Bake Easy Spray first to prevent sticking.
I'm going to start with a half a cup of
melted butter which is one stick and add
one cup of brown sugar to my melted
butter. I'm going to spoon a bit of our
brown sugar and butter combo into each
of these cavities of the muffin pan. Next
I need to cut my pineapple so I'm going
to take a can here and actually drain
the juice because we're going to save a
1/2 cup of it for the recipe. I'm going
to take a few pineapple slices at a time
and cut each of them into 8 pieces. I'm
going to take my pineapple pieces and
put 4 in each of these cavities. Now that
we've prepped our pan we're ready to
make the cake batter. I'm going to use a
box of yellow cake mix, 3 eggs, 1/2 a cup
of pineapple juice, a third cup of
vegetable oil and 1/2 a cup of coconut
rum. We wanted this recipe to be really
fun and tropical. If you don't want to
use coconut rum then just replace this
with a 1/2 cup of pineapple juice. Start
your mixer on low speed for 30 seconds
then scrape the bowl and run it at a
medium speed for 2 minutes. The cake batter
is all mixed and it smells so good the
pineapple, the coconut rum. I can already
picture myself on a tropical island. I'm
going to take a scoop and add this to
each of the cavities making sure that
the pineapple is completely covered.
We're going to bake these in the oven at
350 for 18 to 20 minutes. Make sure
halfway through baking time, you rotate
your pan to make sure everything bakes
evenly. When they're done you're going to
let them cool in the pan for 5 minutes
before putting them onto a cooling grid.
Once your cupcakes have completely
cooled we just need to finish them off
with some whipped cream and a cherry on
top.
And there you have it, that's how you
make coconut pineapple upside-down
cupcakes. This tropical treat is great to
